Sweet and Spicy Melon Salad

High in fiber and vitamins, melon is the low-calorie star in this delicious side dish. For a knockout presentation, serve this sweet and spicy salad in a hollowed-out melon.

Total Time: 15 minutes

Recipe Ingredients

6 cups cubed watermelon, honeydew, and cantaloupe
1/2 cup sugar
1/2 cup water
1/4 cup chopped mint
2 teaspoons finely chopped jalapeño pepper
Juice of 2 limes

Recipe Preparation

  1. Place melon in a medium bowl.
  2. Combine sugar and water in a small pot, bring to a boil, and stir to dissolve the sugar. Cool.
  3. Add the lime juice, jalapeño pepper, and mint to the sugar syrup. Pour over the melon and gently combine.
  4. Serve or make ahead and refrigerate for up to several hours.
