6 cups cubed watermelon, honeydew, and cantaloupe
1/2 cup sugar
1/2 cup water
1/4 cup chopped mint
2 teaspoons finely chopped jalapeño pepper
Juice of 2 limes
- Place melon in a medium bowl.
- Combine sugar and water in a small pot, bring to a boil, and stir to dissolve the sugar. Cool.
- Add the lime juice, jalapeño pepper, and mint to the sugar syrup. Pour over the melon and gently combine.
- Serve or make ahead and refrigerate for up to several hours.
