Tomato season is a beautiful thing–but it’s also short-lived. Make the most of these fleeting weeks with this simple and delicious marinara. Serve over whole-grain pasta or alongside grilled summer vegetables.

Yield: 4 servings, 2 cups each
Active Time: 10 minutes
Total time: 40 minutes

Recipe Ingredients
1 pound tomatoes, chopped
1 clove garlic, minced or pressed
1/4 cup fresh basil leaves, sliced
2 tablespoons chopped red onion
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon capers
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Recipe Preparation
1. In a medium bowl, gently toss the tomatoes with the basil, garlic, red onion, capers, salt, pepper, olive oil, and vinegar.
2. Allow to sit at room temperature for 30 minutes.
3. Spoon over warm pasta and serve.

Recipe Tip
Add some cooked chicken or shrimp to leftover sauce for a heartier pasta salad.
