Recipe: Farro Salad with Radicchio, Walnuts, Cherries

This hearty grain salad is delicious warm or at room temperature, as a light meal or a side dish. Leftovers are great to pack for lunch!

1 1/4  cups semipearled farro

2 1/2  cups water

4 tablespoons sherry vinegar or red wine vinegar

3 tablespoons olive oil

2 cups slivered radicchio

1/2 cup dried cherries

1/2 cup chopped toasted walnuts

1/4 cup chopped fresh parsley leaves

Salt and freshly ground black pepper to taste

Rinse farro and place in a medium saucepan with water; bring to a boil. Reduce heat, cover, and simmer 25 minutes or until the grains are tender and water is absorbed.

Stir in the remaining ingredients and mix well. Season with a little more vinegar if desired.

Makes 4 to 6 servings
