Gluten-Free Grilled Sausage with Kale and Basmati Brown Rice

You may already know that kale can be breakfast-friendly (be sure to check out our roundup of 50-plus kale recipes!), but did you know it can also be quick to make? This simple, savory meal is perfect for those mornings when you’re pressed for time. Just prepare the sausages and rice a day or two in advance and you’ll have a healthy, gluten-free breakfast in less than five minutes.

Yield: 1 serving
Prep time: 3 minutes
Total time: 5 minutes

Recipe Ingredients
2 nitrate-free chicken sausages, cooked and sliced
1/2 cup long-grain brown basmati rice, cooked
1/2 bunch of lacinato kale (aka dino kale), washed and roughly chopped
Coconut oil or ghee

Recipe Preparation

  1. Heat a little coconut oil or ghee in a large saucepan.
  2. Add the kale and cook until it begins to wilt.
  3. Add the sausage and brown rice to allow them to warm up.
  4. Continue to cook for 1 to 2 more minutes until the kale is further wilted and the sausages and rice are warmed through. Enjoy!

Recipe Note
If you can cook the sausages in advance, they’ll stay fresh in the refrigerator  for about two days.
